How to use the Baker's Percentage Calculator
Start with the flour total, then add each ingredient and its weight. The Baker's Percentage Calculator reports each ingredient's percentage, total dough weight, total formula percentage, and hydration when one row is named Water. The result also shows converted weights, the formula, assumptions, intermediate calculations, and text for copying or downloading.
- Enter a Total flour weight greater than zero. Add multiple flour types together before entering the total.
- Choose a Weight unit: grams (g), kilograms (kg), ounces (oz), or pounds (lb). Use that unit for the flour and every ingredient.
- Enter an ingredient name in
Ingredient nameand its amount inWeight. Select Add ingredient to create another row. - Select Remove ingredient to delete a row. Leave both fields empty when a row should be skipped.
- Select Calculate to display the percentages and totals.
How the baker's percentage formula uses flour
Flour is the reference weight, so its percentage is 100%. For every other row, the calculator divides the ingredient weight by the flour weight and multiplies by 100. It converts the selected unit to grams for the calculation, then displays totals in the selected unit.
Flour: 1000 g
Water: 700 g
Salt: 20 g
Yeast: 7 g
Water: 70.00%
Salt: 2.00%
Yeast: 0.70%
Total dough weight: 1727.00 g
The total formula percentage here is 172.70%. Total ingredient weight leaves out flour; total dough weight includes flour and every entered ingredient.
How Baker's Percentage Calculator reads hydration
Hydration appears when an ingredient name matches Water after surrounding spaces are removed and capitalization is ignored. The percentage for that row becomes the hydration value. Rows named Milk, Eggs, or another liquid are excluded unless you put their weight in the Water row.
What the result and validation show
The result lists entered and converted flour and ingredient weights, each ingredient percentage, total ingredient weight, total dough weight, total formula percentage, the formula, and the assumptions used. Values use fixed decimal places. Copy result places the plain-text summary on the clipboard, and Download result (.txt) saves the same summary as a text file.
Calculation stops if Total flour weight is empty, invalid, or zero; if every ingredient row is empty; if a row has a weight but no name; or if a weight is invalid or below zero. Reset restores 1000 g flour with Water, Salt, and Yeast rows, clears errors, and hides the result. The calculation uses the weights you enter and does not fetch recipe data or apply an outside baking convention. The script does not send the entered weights to a server.
Where Baker's Percentage Calculator fits a recipe
Enter a 1000 g flour base with Water, Salt, and Yeast to inspect the formula before mixing. After you change the flour total, select Calculate to recalculate each ingredient against the new reference weight.
For a formula note, enter the flour weight and ingredients in kilograms, ounces, or pounds, then copy the plain-text result. To compare doughs, calculate each set of rows with its own flour reference.
When another food calculator fits better
Use Baker's Percentage Calculator for ingredient percentages tied to a flour weight. Choose the Dough Hydration Calculator for a flour-and-water hydration figure. Choose the Pizza Dough Calculator for pizza dough ingredient weights based on dough-ball count, dough-ball weight, hydration, and baker's percentages. For recipe scaling and other food calculations, see Food Calculators for Recipes, Dough & Nutrition or the Recipe Calculator.
Frequently asked questions
What is the baker's percentage formula?
Use (ingredient weight / flour weight) x 100 for each ingredient. Flour is 100%, and total dough weight adds flour to all ingredient weights.
How do I calculate a baking percentage from flour weight?
Enter the flour weight as Total flour weight, use the same Weight unit for each ingredient, and select Calculate. The result divides each ingredient weight by the flour weight.
How does the calculator calculate hydration?
The calculator uses the percentage of the row named Water as hydration. Surrounding spaces and capitalization do not affect that name; rows named for other liquids are excluded.
Can I calculate baker's percentages in ounces or pounds?
Yes. The calculator accepts grams (g), kilograms (kg), ounces (oz), and pounds (lb). Enter Total flour weight and every ingredient in the selected unit; the calculation converts them to grams internally.
